Whether you’re hosting guests or fueling up post-workout, this elevated guac is a flavorful way to support your wellness from the inside out.

Guacamole

  • 1 cup frozen shelled edamame, thawed

  • 1 ripe avocado, peeled and pitted

  • ½ cup chopped cilantro

  • 2 cloves garlic, minced

  • ¼ red onion, roughly chopped

  • ½ jalapeno finely chopped

  • Juice of 2 limes

  • 2-3 tablespoons of water

  • Salt and black pepper, to taste

Instructions

  1. Put edamame, avocado, cilantro, garlic, onion, jalapeno, and lime juice in the bowl of a food processor and pulse until combined. You may need to use a spatula to scrape down the sides to help the processor combine ingredients.

  2. Add enough water to make a creamy consistency and pulse again until smooth.

  3. Transfer edamame guacamole into a serving bowl and season with salt and pepper. Stir. Serve with vegetables for dipping.

Can also be used as a salad or grain bowl topping. It is great as a spread in wraps, as well!
