Watermelon, Cucumber & Tomato Skewers

Watermelon and cucumber are cool and healthy ways to chill out during the summer. Watermelon is 92 percent water and contains only about 9 grams of sugar per cup when diced. So you can put it on a skewer and enjoy -- without worrying about sugar overload. And cucumber is 96 percent water, letting you rehydrate and refresh at once.
Vanilla-Honey Gastrique
¼ cup honey
¼ cup white wine vinegar
½ vanilla bean, split and scraped
In a small saucepan, combine the honey, white wine vinegar and vanilla bean paste. Bring to a simmer and cook until reduced by half. Remove from the heat and cool. You should have a light syrup. Set aside.
Watermelon Cucumber Tomato Skewers
12 1-inch watermelon cubes
12 1-inch cucumber cubes, skin-on
6 cherry tomatoes (yellow or red), halved
24 mint leaves (extra for garnish)
12 bamboo skewers (4½-inches long)
½ cup Vanilla-Honey Gastrique
To build a skewer: Start with a cucumber cube, followed by a mint leaf, then a tomato half, another mint leaf and a cucumber cube, and finally a watermelon cube. Repeat this process for the remaining skewers. Place the skewers on your favorite platter and drizzle with some of the Vanilla-Honey Gastrique. Garnish with additional mint leaves, if desired.
