For the Chia pudding layer:

  • 1 cup unsweetened soy milk

  • 3 tbsp chia seeds

  • ½ tsp vanilla extract

  • ½ tsp blue spirulina

  • 2 tbsp allulose (adjust to taste)

For the yogurt layer:

  • 1/2 cup Greek yogurt (dairy or non-dairy)

  • 1 scoop vanilla protein powder

  • ½ cup raspberries

Instructions

  1. Make the chia pudding:

    In a container or jar, add soy milk first, then stir in the chia seeds, vanilla extract, blue spirulina, and allulose. Mix well to combine. After 10 minutes, stir again thoroughly to prevent clumping. Cover and refrigerate for at least 2–4 hours, or overnight, until it thickens.

  2. Prepare the yogurt layer:

    In a separate bowl, mix the yogurt with protein powder. Add the raspberries and mash until well combined.
    Stir until completely smooth and no lumps remain. Set aside.

  3. Assemble the layers:

    In a serving glass or jar, layer in this order:

    • Blue-Chia pudding

    • Raspberry-Yogurt-protein mixture

  4. Top it off:

    Garnish with coconut flakes and fresh mango.

Serve & enjoy!
