Garlic and Mushroom Pizza

For those who desire the comforting nostalgia of pizza while staying waistline friendly, our pizza recipe is an absolute must. Our homemade crust is well worth a little extra effort to take your pizza from ordinary to extraordinary. The fresh flavors and textures, which can only be achieved from a little labor of love, makes our pizza one of the most sought after recipes from our guests. Pizza can be part of a healthy eating plan by having two petite slices as the side that accompanies a salad as your main entrée.

Pizza Dough

Yields: 32 8-inch pizzas

Ingredients

  • 1 tablespoon active dry yeast

  • 1 tablespoon honey

  • 2 cups water at 105°F (check with a thermometer)

  • 2 cups high-gluten flour

  • 2 cups whole wheat pastry flour

  • 1 cup unbleached white flour

  • 1½ tablespoons kosher salt

  • 2 tablespoons extra-virgin olive oil

  • Cornmeal

Instructions

  1. Combine the yeast, honey and warm water in a small bowl. Stir to combine and let stand for 15 minutes at room temperature. It should become foamy.

  2. In a large bowl, combine the flours and salt and mix well. Set aside.

  3. In a large electric mixer using the dough hook attachment, add the yeast mixture. Start turning the yeast mixture on low while adding the flour mixture one cup at a time and alternating with the olive oil. The mixture should form into a ball. If it looks too dry, add a couple drops of water and keep mixing until it forms into a tight ball. If the mixture is too sticky, add a couple pinches of high-gluten flour until the mixture forms into a ball. Let the dough mix at low speed for 8 minutes.

  4. Remove the dough and knead for 1 minute on a floured flat surface to release any gases. Form into a ball and place in a large mixing bowl coated with non-stick cooking spray. Coat the dough lightly with the spray and cover the bowl with plastic wrap.

  5. Let rise at room temperature near a warm heat source (about 80-84℉) for 1½ to 2 hours. It should double in size.

  6. Remove the dough and cut into 3-ounce portions. On a flat surface dusted with flour, use the palm of your hand to roll the dough into balls that are slightly bigger than a golf ball but smaller than a baseball.

  7. Place the dough balls on a baking sheet pan that has been sprayed with non-stick spray. Spray the tops of the balls, cover with a slightly damp dish towel and then cover with plastic wrap. Chill overnight in the refrigerator.

  8. Remove from the refrigerator and let sit at room temperature for about 15 minutes. Lightly spray a baking sheet with non-stick spray and dust with cornmeal. On a flat surface dusted with flour, roll out the dough balls using a rolling pin. Turn the dough 90 degrees after each roll so you will get perfect 8-inch circles. Place on the baking sheet.

  9. Top the pizza dough with the recipe below and bake according to directions.

Garlic Oil / Roasted Garlic

Ingredients

  • ½ cup garlic cloves

  • 1 cup extra-virgin olive oil

  1. Preheat the oven to 350℉. Place garlic and olive oil in a small pan, cover with aluminum foil and place in the oven.

  2. Roast for 30 minutes or until the garlic is softened and roasted.

  3. Set aside and cool. Store in the refrigerator.

White Sauce

  • 2 cups ricotta cheese

  • 6 Roasted Garlic cloves

  • 1 teaspoon sea salt

  • ¼ teaspoon black pepper

  1. In a food processor, combine all the ingredients and blend until completely smooth.

  2. Set aside.

Toppings

  • 2 cups shredded mozzarella cheese

  • 12 cremini or white button mushrooms, sliced

  1. Preheat the oven to 350℉. Brush the pizza dough with a tablespoon of Garlic Oil. Spread ¼ cup of the White Sauce evenly on top, leaving a ½-inch border.

  2. Sprinkle ¼ cup of mozzarella and place the sliced mushrooms over the mozzarella.

  3. Bake in the oven for 6 minutes.

  4. Rotate the pan and bake for an additional 4 minutes.

  5. Remove and let rest for one minute before cutting into pieces. Enjoy!
