Chocolate Covered Strawberries & Dates

Chocolate Covered Strawberries

Ingredients:

  • 6 Strawberries (washed and completely dry)

  • 1 cup Chocolate Chips (Enjoy Life Brand Semi Sweet)

  • Maldon Salt

Directions:

  1. Wash and dry Strawberries.

  2. Place the chocolate chips in a double broiler and melt, stirring constantly. (pot with water simmering and a bowl with chocolate on top, using the steam to heat up the bowl and melt the chocolate.

  3. Using the stem or a toothpick, dip each strawberry into melted chocolate and use a spoon to coat the strawberry until completely covered.

  4. Place chocolate covered strawberries on a platter lined with parchment. Sprinkle crushed peanuts on top of each date.

  5. Finish strawberries with a sprinkle of Maldon Salt.

  6. Place the strawberries in the refridgerator to allow the chocolate to set. 15 to 30 minutes.

  7. Additional topping: Have additional crushed toppings, like crushed peanuts or coconut flakes and add to strawberries as soon as you place them on the platter.

  8. Enjoy!

Chocolate Covered Dates

Ingredients:

  • 10 each Pitted Medjool Dates

  • 3 Tablespoons Peanut Butter

  • ¼ Cup Peanuts (toasted, Chopped or Crushed)

  • ½ Cup Chocolate Chips (Enjoy Life Brand Semi Sweet)

  • Maldon Salt

Directions:

  1. Remove Pits from Dates if you don’t have pitted dates.

  2. Fill each date with peanut butter (about ¼ teaspoon) (I place peanut butter in a piping bag with a tip to help fill the dates, inserting pipping bag tip in the larger opening of the date)

  3. Place the chocolate chips in a double broiler and melt, stirring constantly.

  4. Using a toothpick, dip each date into melted chocolate and use a spoon to coat the date until completely covered.

  5. Place chocolate covered date on a platter lined with parchment. Sprinkle crushed peanuts on top of each date.

  6. Finish Dates with a sprinkle of Maldon Salt.

  7. Place the dates in the freezer to allow the chocolate to set. 30 minutes to 1 hour.

  8. Recommended to serve straight from the freezer for a firmer bite.

  9. Serve with berries if desired.
