Apple Spice Muffins Recipe

People love our muffins and are always surprised they are gluten-free. The secret is using a gluten-free flour blend, and in many of our muffins adding ricotta cheese to help improve the overall texture and moistness. Apple Spice Muffins are perfect to serve in the fall as the weather starts to cool.
Ingredients
2 tablespoons grapeseed oil
½ cup sugar
½ cup ricotta cheese or coconut yogurt
1 egg
1 tablespoon soy milk (or other non-dairy milk)
½ teaspoon vanilla extract
1 cup Glutino® All Purpose Gluten Free Flour
¼ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon kosher or sea salt
½ teaspoon allspice
½ teaspoon cinnamon
½ cup shredded apple, peeled (We recommend Pink Lady, Honey Crisp, Gala or Fuji varieties.)
Instructions
Preheat the oven to 350℉. Lightly grease a mini-muffin tin.
In a small bowl, whisk together the grapeseed oil, sugar, ricotta cheese, egg, soy milk and vanilla extract. Set aside.
In a large bowl, combine the flour, baking powder, baking soda, salt, allspice and cinnamon and whisk well to combine.
Add the wet ingredients to the dry ingredients and mix just to combine, making sure not to leave any dry lumps in the batter.
Once combined, gently fold in the shredded apple. Do not overmix.
Once the batter is mixed, evenly portion the batter into the prepared muffin tin. Bake for 20 minutes, rotating the pan halfway through baking, until golden brown. A toothpick inserted into the center of a muffin should come out clean.
Allow to cool for 5 minutes in the tin and then remove and finish cooling on a wire rack. Enjoy!
